Delicious Potato and Leek Soup

There’s nothing better than homemade soup and this is defo a must have on your list of recipes to hand.

Another delicious yet quick and easy meal to make that will keep you wanting more with every mouthful. This is my mum’s recipe and she has allowed me to share this with you guys so i hope that you will love this as much as i do!!

What You Will Need

  • 3 Large Leeks
  • 2.5kg Bag of White Potatoes
  • Dry Sage
  • Salt & Pepper to taste
  • Garlic
  • Chilli Flakes
  • Vegetable Stock
  • Milk
  • Parsley

Step One

First things first you want to get your 3 large leeks and give them a good wash. After they are clean you are going to slice them up and then gently fry them off in a pan on a low to medium heat in enough butter to coat the base of your frying pan.

Sprinkle a little salt and ground black pepper to taste, with a tablespoon of chilli flakes.

After roughly 5 minutes, when they are nice and soft and their natural juices and flavours have came out, they are ready.

Step Two

Now you are going to spice up your leeks a little bit by adding 3 cloves of garlic, another tablespoon of chilli flakes and a generous amount of dry sage.

After adding your seasonings, you are going to add in 2 ½ litres of water and two vegetable stock cubes.

Step Three

Now it’s time to add your nice peeled and diced potatoes. (to your preference of size).

After adding your potatoes, bring the soup to boil. Then allow this to simmer for 45 minutes.

Step Four

After allowing this delicious soup to boil, you want to add fresh parsley and a half pint of milk to serve!
