Vegetable Filled Pasta Bake
This delicious pasta is packed with loads of veggies that will leave your taste buds tingling for sure!!
Not only do I love the fact this pasta is just veggie central but look how colourful it is. absolutely gorgeous looking and tasting!

What you will need
- 2 Large Leeks
- Sugar Snap Peas
- Broccoli Florets
- 1 Red Pepper
- Cherry Tomatoes
- Dried Rosemary
- Dried Basil
- 2 Garlic Cloves
- Mixed Italian Herbs
- Chilli Powder – 1 teaspoon
- Salt & Pepper
- Pasta (your choice of style)
- 2 Vegetable Stock Cubes

The first step to creating this yummy veggie pasta dish is to chop up your leeks, tomatoes, red pepper, broccoli florets & sugar snap peas. The cherry tomatoes you just need to chop in half.
Once you have chopped up your veg to your liking you are going to fry them off in olive oil with salt & pepper to taste, in a deep frying pan.
Once the veggies are ready we crumble in 2 vegetable stock cubes (you may use the stock pots if you prefer).
At this stage we can add our garlic, italian herbs, dried basil and chilli powder.
Whilst you are letting the flavours come together, boil up some pasta until it is el dente or to your liking. Once the pasta is ready you can then add it to your mixture of flavour packed veggies.
To moisten the mixture of pasta & veggies add a little water (not too much remember it’s just to make it moist for being in the oven).
- if you would prefer then you can add a little cheese sauce mixture to substitute the water for a more creamier and cheesier finish.
Once you have mixed in the water simply transfer the mixture into a deep baking tray and sprinkle a generous amount of grated cheese on top.
Place into the oven at 180 degrees for approximately 30-40 minutes (until the cheese on top is nice and golden).
Serve immediately and enjoy!!
